Cut from the diaphragm near the ribs, known for its intense beef flavour, low to medium in fat, it delivers a bold, juicy bite with a slightly chewy texture. More character than tenderness, it’s marinated in Thai pesto and finished with a touch of chilli. Best enjoyed medium-rare. Please let us know if you prefer no chilli.

Cut from the same area as skirt steak, near the diaphragm by the rib. With a medium fat level, it offers a juicy, rich bite and a smoother, more relaxed texture. It’s a butcher’s favourite and our best seller. Seared and finished with Harmony caramelised onion jam. Best enjoyed rare to medium-rare.
