This is the “younger sibling” of the Thera Line — semi-hard mountain cheese, rind washed weekly.

Flavour: nutty, earthy, slightly tangy, still gentle enough to be easy-drinking cheese. Texture: firm but still supple, melts nicely.
 
Think of it as Thai cousin of Appenzeller or Comté jeune — friendly, versatile, good for cheese board or melted in dishes.
 
Pair it with a crispy white aka our Verdhelo, or a light red as our spring. For beer Weisen is nice, Mojito cider is a banger
